There’s the nondescript businessmen in button-downs discussing their clients, the hungover rockers chaining their Parliaments, socialites sipping on sugary drinks while they check their Instagram feeds on their phones. Just another Wednesday at the Chateau Marmont. My own cell buzzes, jolting me out of my reverie: Hi Tori it’s Ella. So sorry, running 5 mins late, underestimated LA traffic!! X. The actress may have the acting chops to make it in Hollywood, but she’s imported a quintessential British politeness alongside that sets her apart from the typical Chateau demo.

As promised, she arrives five minutes later, wearing a breezy button- down dress, her hair in a wispy updo. She extends her hand, complete with bubblegum pink nails, polish chipped at the corners, and apologizes again for her on-time-by-LA-standards arrival. We head inside since she only packed for sunshine: “Is February always really cold and windy, or is it just now that Trump is in town?” she says with a smile.

Since her first major role in 2010’s Never Let Me Go, Purnell has risen through the ranks by nailing a certain type—usually a precocious teenager or strong-willed heroine facing larger-than-life challenges. But as she’s matured, so have the parts that are coming her way. She’s now exploring the world of television for the first time with her most adult role to date. In Sweetbitter, Purnell is cast as Tess, a struggling New York waitress who is developing a palate for fine wining and dining and sensual trysts. Although Tess’s life may seem lavish, it is far from it—the first episodes find her living paycheck to paycheck, trying to find her calling.

Purnell says that it’s been her most natural role yet. “I do not have to act on the show,” she tells me. “I am Tess.” For someone who has flourished by playing characters in extraordinary, sometimes fantastic situations, Tess may seem like a surprising choice. However, the realistic way in which Tess’s life is depicted on the show was exactly what drew Purnell to the role: “This thing came through my email, and I think the first line said, ‘Tess’s life is in shambles.’ I was like, dude, me too!” Although the actress may seem to have a clear path ahead of her, she, like many of us, is still figuring things out as she goes. “I’m 21 and I have no idea what I’m doing or who I am. Everybody sort of looks like they have their life together on the outside, but nobody really does. Everybody has that ten-percent of them that wants to get a dog, move to Fiji, and open up a bar.”

After early roles as a child in films like Never Let Me Go and Miss Peregrine’s Home for Peculiar Children, Ella Purnell is ready to turn her acting, once considered just a hobby, into a full-fledged career. For her, this move comes in the form of the lead role in the new Starz series Sweetbitter, a New York-centric show that fills the void viewers may have been feeling since the wrapping of Sex and the City or Girls. Tess, an instant heroine, is a character with which many of this city’s imports will be able to closely identify, a young woman who has moved to New York with only a few bags and no clear direction.

The show, which premiered last night, follows the same premise as Stephanie Danler’s best-selling novel, which made a major splash upon its release in 2016. Sweetbitter was inspired by her own experiences working at Union Square Cafe, opening restaurants, and running beverage programs at various New York institutions before pursuing an MFA in creative writing at Parsons. Danler’s Tess is on an unlikely hero’s journey, leaving behind a life in Ohio for the unknowns of New York. She is unapologetically lost, finding herself thrown into training at one of Manhattan’s best restaurants. Through Tess’s eyes, we experience the grit of the food industry, the loneliness of a girl on her own in the city, and 2006 pre-gentrification Williamsburg. It’s a coming-of-age story where the outcome is not a fairytale—but rather shows the vulnerability of real life and the pains of hard work.

Like her character, Purnell is excitable and wide-eyed, relishing this role as one of her first forays into television. Over the phone, the 21-year-old actress has an authentic and humbling energy. “If I’ve learned anything, it’s that you always have to bring flat shoes to a party,” she jokes. She is no stranger to acting, having grown up onstage and onscreen with roles in Maleficent and, more recently, in Churchill and Amazon’s coming Agatha Christie adaptation Ordeal by Innocence. Born and raised in London, she is quick to point out that her family was not in the business. “My mom is a yoga teacher and my dad does something that requires him to wear a suit,” she laughs.

The lead character in the Starz take on the hit book “Sweetbitter” talks about how playing Tess helped her come to terms with her own career trajectory.

Ella Purnell couldn’t help herself: she needed a Lenny Kravitz sighting.

In town for the premiere of her new Starz show, “Sweetbitter,” Purnell had gone along to the annual Tribeca Film Festival dinner Chanel throws, and while waiting for the bathroom downstairs at Balthazar, had caught a glimpse of the night’s surprise guest. So there she stationed herself in a leather chair, making for one of the night’s cutest photo ops.

Seeing Mr. Kravitz in the flesh had made all the difference.

“Usually those events are kind of scary, but there was a nice vibe last night,” she says the following afternoon, from a bar stool at the Bowery Hotel’s restaurant, Gemma.

The English actress (whose contract with Chanel likely makes such events all the more appealing) is slowly adjusting to the spotlight, though she remains a rather introverted young woman who prefers a jazz bar to a nightclub and still gets homesick for East London, no matter how fabulous the Chanel parties might be.

All that is not unlike her “Sweetbitter” role, which premieres this Sunday. Purnell plays Tess, a recent transplant to New York whose coming-of-age is captured through her experience working in the fine-dining industry. The show is based on Stephanie Danler’s debut novel, which, published in 2016, was one of that summer’s most popular books.
